A mix of reducing sugars and fibers to prevent gelato hardening inside display cabinet. Used to correct the hardening tendency of gelato. To be added in the mixture with a high content of fat, such as: pistachio, hazelnut, walnut, choco-hazelnut etc. Dosage recommended 20g to 60g per liter of mix accordingly to gelato balancing.
